Description
Organic agar agar vegetable gelatin powder from SaludViva. It is ideal for stabilizing and gelling both savory and sweet recipes. It is a very good alternative to animal-based gelatins.
Indication
It is a gelatinous substance extracted from algae of the genus Gelidium and/or Gracilaria with a high fiber content, easy to digest, regulates intestinal transit, provides minerals and helps eliminate stomach acidity.
It is used to gel all kinds of preparations such as purees, pates, stews, ice cream topping, yogurt, it is an ingredient widely used to make vegan cheeses, etc.
- It absorbs up to 20 times its weight.
- It works at low concentrations.
- Gels in a wide pH range.
- It is soluble in hot water, and when cooled and gelled, it maintains its structure up to 70-85ºC without melting.
- It is odorless and tasteless.
Intake mode
It is recommended to mix 2g of agar-agar in 100ml of cold liquid. Bring to a simmer and boil for 1 to 2 minutes, stirring constantly. In the event that it is a cold preparation, let it cool a bit and then add the other ingredients little by little. Optimum gelation is achieved after approximately 3 hours refrigerated. Keep in mind that 2g of powdered agar-agar (1 level teaspoon) is equivalent to approximately 6 sheets of animal gelatin.
Precautions
May contain traces of nuts and sesame.
Storage conditions
Store in a cool place (below 18ºC), dry, protected from sunlight and isolated from the ground.
