Description
Xantana Gum from Glu10Ban Xantana gum is used with our mix, or with any mixture of flours, that the preparation has characteristics similar to the mixture with gluten, and will conserve the gases resulting from fermentation, allowing a spongy and consistent bread.
Indication
Xanthan gum is a natural additive, since it is a polysaccharide obtained by the fermentation of a bacterium. It can be used for various purposes, such as thickener, stabilizer, emulsifier, suspending agent, salad wrapper, sauces, instant products, desserts, pastry, dairy products and fruit juices. In general, for each cup of flour you can add between ½ to 1 teaspoon of xanthan gum.
