È un cereale molto leggero e digeribile, ottimo se preparato in insalata perché rimane ben sgranato. È veloce da cuocere, privo di glutine, con poco amido ed è ricco in ferro. Quindi è adatto per chi soffre di celiachia e anemia. Lo consiglio, è un'ottima alternativa al riso!
